This Venezuelan green bean from the Hacienda Cocollar, Caripe has fermented for 48 hours in water basins after being extracted from the cherry. The bean is then mechanically dried in a diesel-powered vertical dryer. The fermentation stage results in a very interesting coffee with sweet notes.
